In Spain, Sparkling Wine and Orange Juice have been combined and drank for Centuries.
…But the first recorded use of Champagne and Orange Juice was thought to have started in 1921.
Buck’s Fizz
In the London Bucks Club a gentleman wanted an excuse to start drinking before lunchtime. The Bartender there created a secret concoction that. over time, morphed into what we now called: Buck’s Fizz.
The Buck’s Fizz has the same ingredients as the Mimosa, just different qualities. The most widely accepted Buck’s Fizz recipe contains one part orange juice to two parts Champagne.
…The Mimosa, on the other hand, has equal measures of orange juice and Champagne. You know, so you feel less like you’ve got a problem when you drink one at lunch.
The Birth of the Mimosa

A bartender by the name of Frank Meier is credited to have created the modern-day Mimosa, while working at The Ritz, Paris.

It’s believed that this plant was particularly favoured by French gardeners at the time and that’s where the name came from.

The popularity of the Mimosa grew in the 1940s when the cocktail became a favourite of Alfred Hitchcock.

Some stories will tell you it was actually Hitchcock who invented the cocktail in San Francisco, but in reality, he just made it popular.

- They are made from different grapes. Champagne is made from chardonnay, pinot noir, and pinot meunier grape, whilst Prosecco is mostly made from glera grapes.

Whatever Champagne you like, whatever Champagne you have in your house or whatever Champagne meets your budget.
If you want to make Mimosa on a smaller budget, then swap Champagne out for Prosecco.
